Celebrate National Spaghetti Day with Mom’s Garlic & Basil Spaghetti Sauce

Mom’s Classic Spaghetti with Meatballs

Ingredients:

  • 3 (1-inch thick) slices of Italian bread with crusts
  • Milk
  • 1 pound lean ground beef
  • 2 tablespoons grated Parmesan cheese
  • 1 egg, beaten
  • 1 tablespoon. minced parsley
  • 1 large garlic clove, minced
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 3 Tbsp. olive oil
  • Mom’s Garlic and Basil Spaghetti Sauce
  • 1 pound. spaghetti, cooked al dente and drained well
  • Additional grated Parmesan cheese

Procedure:

  1. Place bread in a medium bowl; pour enough milk on top to cover the bread.
  2. Let the bread soak in the milk until it becomes soft, about ten minutes.
  3. Place meat in large bowl and blend in cheese, egg, parsley, garlic, salt and pepper.
  4. Squeeze milk out of bread and discard milk.
  5. Tear bread into small pieces and add to meat mixture.
  6. By hand, form meatballs about 1 ½” in diameter.
  7. Heat olive oil on medium heat in heavy 12-inch, deep-sided skillet.
  8. Add meatballs; sauté for about fifteen minutes, or until golden brown. Turn meatballs often so they will hold shape.
  9. Carefully pour off all oil from the skillet, leaving the meatballs.
  10. Add Mom’s Garlic and Basil Spaghetti sauce. Cover and simmer for ten minutes.
  11. Place a portion of the cooked spaghetti on each serving plate and top with a portion of the meatballs and sauce.
  12. Sprinkle additional Parmesan cheese.

Serves 4-6

Quick & Easy Lasagna

Lasagna is hard to beat when your appetite is hungry for something rich, gooey and Italian. This tasty, easy version is likely to wind up on your table often!

Prep Time: 30 minutes
Bake Time: 35-40 minutes

Ingredients:

  • 4-1/2 cups Mom’s Garlic & Basil Spaghetti Sauce
  • 12 wide lasagna noodles, cooked al dente, drained well and laid out flat on a platter
  • 1-1/2 pounds link-style Italian sausage, cooked, drained and sliced about 1/4-inch thick
  • 1 pound ricotta cheese, crumbled
  • 1 pound mozzarella cheese, shredded
  • 1 cup grated Parmesan cheese
  • 1 egg, beaten until frothy
  • Additional Parmesan cheese, grated

Procedure:

  1. Preheat oven to 350 degrees. Lightly grease bottom and side of a 9″ x 13″ baking dish.
  2. Pour a thin layer of the Mom’s Garlic & Basil Spaghetti Sauce into the bottom of the dish.
  3. Overlap four of the lasagna noodles lengthwise in the dish.
  4. Scatter half of the sliced Italian sausage over the noodles.
  5. Combine the three cheeses in a bowl and toss to blend well. Stir the beaten egg into the cheese mixture.
  6. Scatter half of the cheese over the sausage slices. Pour another layer of the spaghetti sauce over the cheese.
  7. Layer another four noodles and repeat with the remaining sausage and cheese layers.
  8. Pour another glaze of the sauce over the cheese.
  9. Place the final four noodles on top and pour the remaining sauce over the lasagna.
  10. Scatter a generous portion of grated Parmesan on top.
  11. Bake in preheated oven for about 35-40 minutes, or until cheese has melted and the dish is bubbly hot and lightly browned.
  12. Cut into desired portion sizes and serve hot.
