Enotria Restaurant & Wine Bar Will Debut an Innovative Culinary Program Led by New Executive Chef Pajo Bruich
Enotria Restaurant & Wine Bar in Sacramento will debut a new culinary program tonight, led by one of the area’s most acclaimed chefs – Pajo Bruich.
Chef Bruich, a Sacramento native, is committed to uplifting the reputation of his hometown’s dining scene, and to do so has assembled an all-star culinary team to assist him in his new role as Executive Chef at Enotria Restaurant & Wine Bar. Accompanying Bruich in the kitchen is Sous Chef Stan Moore, formerly of The Kitchen Restaurant, and Executive Pastry Chef Edward Martinez, formerly of Hawks Restaurant. In 2011 Gayot awarded Chef Bruich as one of the “Top 10 Restaurants Serving Modern Cuisine,” amongst such acclaimed restaurants as The French Laundry and Alinea. He was the opening Executive Chef of Lounge ON20 and was most recently a stagier at Michelin two-starred Benu in San Francisco. “We are really excited about this project at Enotria and I look forward to leading a super talented team,” said Bruich. “We all believe we’re doing something really special in Sacramento.”
Guests of Enotria can expect an inspired menu focused on seasonal produce of the Sacramento and Northern California regions and utilizing relationships with local passionate producers. The menu will feature both à la carte and prix fixe options and may include such dishes as Gnocchi with ricotta and black truffle; Hamachi with jasmine, melon and chili; and Pork Belly with bacon, peach and onion. Desserts may include Greek Yogurt with blackberry and brown butter as well as Roasted Tomatoes with Mascarpone, raspberry and basil. Each dish on the menu offers its own unique paired wine suggestion from the restaurant’s extensive list of California and Old World selections curated by celebrated Wine Director and Certified Sommelier Matthew Lewis. Lewis’ wine program has been awarded the highly respected “Best of Award of Excellence” for several consecutive years by Wine Spectator, and is the only establishment in Sacramento to receive the “Best of” award for its strong focus in three distinct categories.
In addition to the wine program, Enotria’s beverage menu offers a wide-ranging list of craft beers, cocktails with in-house-made infusions, an extensive scotch and cigar program, and an updated coffee program featuring local roaster Chocolate Fish Company. Enotria will continue to offer an engaging program of special events including weekly wine tastings, wine pairing dinners, a summer concert series, a guest Chef series, and more, all located on their intimate outdoor patio and orchestrated by Lewis, Dining Room Manager Emily Turner, and General Manager Michael Coyne II. “We are beyond excited to have Chef Bruich leading our culinary team,” said Coyne. “We are extremely passionate about providing our guests with a unique and sophisticated food and wine experience, and we know that Pajo’s food will be the perfect pairing with Enotria’s wine program.”
