Arc of Flavor – Re-imagining Culinary Exchange, from the Mediterranean and Middle East to Asia
Whether one thinks about the flow of flavors, ingredients, culinary ideas and techniques, or approaches to meal structures, one sees that the cuisines of these countries have been deeply influenced by successive waves of cultural migration and evolution. Chefs working in 21st century American restaurants and foodservice operations increasingly have all of these layers and permutations of flavors and culinary techniques at their fingertips.
Arc of Flavor: Re-imagining Culinary Exchange, from the Mediterranean and Middle East to Asia will feature demonstrations, presentations, and tastings by leading chefs, cooks, authors, journalists, and other experts, to examine these culinary traditions both in their native countries and in their U.S. adaptations, to better understand how they drive contemporary menu innovation. The 15th Annual Worlds of Flavors Conference & Festival will represent more than 20 cultures and cuisines, including Israel, Lebanon, Turkey, Spain, Morocco, Indonesia, and many more.
