SPQR Welcomes Chef John Sundstrom and Nino Negri Vineyards on November 6
SPQR’s Executive Chef Matthew Accarrino partners with James Beard Award-Winning Chef John Sundstrom of Seattle’s Lark restaurant for a guest-chef dinner featuring wines from Italy’s Nino Negri vineyards on Wednesday, November 6, 2013. Chef Sundstrom plans to serve dishes inspired by his newly released cookbook and iPad app “Lark: Cooking Against the Grain,” showcasing his innovative cuisine inspired by the Pacific Northwest. Personalized copies of the Lark cookbook will be available for purchase during the dinner.
Complementing the menu, co-owner/wine director Shelley Lindgren will be on hand with Sara Maule, daughter of a winemaking legend, Casimiro Maule of Nino Negri in the Lombardia region in Italy, to pour through the sub-regions and styles of Chiavennasca (Nebbiolo). Founded a century ago, Nino Negri blends tradition with technology highlighting the little-known grapes grown along the Italian Alps in a challenging and rugged terrain.
This is a unique opportunity for guests to enjoy Chef Sundstrom’s blend of simple, seasonal, classic and adventurous dishes, alongside the modern Italian cuisine of Chef Accarrino and wines paired from Italy’s historic Nino Negri vineyards. Dishes will include Hamachi Crudo with preserve lemon, green olive and fennel, Pork Tongue with dolce forte, and Alaskan Spot Prawn with roe butter and matsutake.
