Acquerello Hosts First of Its 25 Year Anniversary Alumni Dinner Series
In celebration of its 25 year anniversary this July 2014, Michelin starred, fine-dining Italian restaurant Acquerello is hosting the first of its six Alumni Guest Chef Anniversary Dinners on Tuesday, June 3, 2014.
The restaurant will welcome back Chef Liza Shaw of Merigan Sub Shop in San Francisco, Pastry Chef Tim Nugent of the soon to open Shakewell Bar & Kitchen in Oakland, and Chef Michael Shwe of Proof Baking in San Francisco. Wine pairings will be selected by Acquerello’s Wine Director Gianpaolo Paterlini and 10% of the evening’s proceeds will benefit the local non-profit New Door Ventures.
Developing a menu in collaboration with Acquerello’s Executive Chef Suzette Gresham, Shaw began her career at Acquerello in September 2002 as an Extern, for three months, then working as Garde Manger for three months. She then quickly moved over to pasta production until February of 2004 when she left to help open A16. Shaw was named a “Rising Star” by Restaurant Hospitality magazine in 2010, and her restaurant Merigan Sub Shop was voted “Best Meal Under $15” in a 7×7 reader’s poll last winter 2013.
Preparing dessert and assisting Shaw and Gresham in the kitchen on June 3, Nugent worked at Acquerello from 1993-1994 as Sous Chef when the restaurant had only two kitchen employees (himself and Gresham) before moving to Zuni Café and transitioning to the world of pastry. Over the years, Nugent has returned to Acquerello to cook for special events. He has received accolades in both local and national magazines and newspapers including The New York Times, and appeared on the first season of Bravo TV’s “Top Chef: Just Desserts.”
For the June 3 dinner, Shwe will bake naturally leavened sourdough breads made from organic flours. Shwe was at Acquerello from 1998-2000 holding down various stations as a volunteer to learn the craft of cooking from the very best. He works by day at Google in San Francisco as a program manager. In his time off, he uses his bread company Proof Baking as a vehicle for social change, partnering with New Door Ventures to use the proceeds from his bread to fund the organization’s job training programs for disconnected youth.
