Neopolitan Styled Pizzas from Cupola Pizzeria’s New Chef Marc Tennison

Marc Tennison has been named chef of Cupola Pizzeria, Lark Creek Restaurant Group’s restaurant celebrating Italian cuisine in the Westfield San Francisco Centre. Cupola, which means “dome” in Italian, is located in the Restaurant Collection on the fourth floor of the Centre, under the iconic Emporium dome ceiling. Prior to his current position, Tennison was sous chef at the restaurant.

At Cupola Pizzeria, Tennison offers Neapolitan-style pizza from a handcrafted Stefano Ferrara wood-burning pizza oven imported from Naples, Italy, in addition to salads, housemade pastas, panini and desserts in a fun, fashion-focused atmosphere. Some of the dishes Tennison will add to the menu this fall include Garlic and Bread Soup with onion broth, red kuri squash, and poached egg; Butter Lettuce Salad with French butter pears, toasted walnuts, and gorgonzola; Butternut Squash Ravioli with Amaretti cookies, brown butter, and sage; Kabocha Squash Pizza with hot coppa and smoked mozzarella; Steamed Artichokes with parsley bread crumbs and lemon zabaglione; Bolognese with Handkerchief Pasta and pork, pancetta, dried porcini, sage, and ricotta.

“I love the way food brings people together – from family dinners on a Sunday night, to a BBQ with friends or even watching our communal table at Cupola fill with strangers who can relate to each other by virtue of the fact that they’re sharing a meal,” says Tennison. “As a chef I want to be able to help people make great memories surrounding food.”

In his youth, Tennison worked as a server but never enjoyed being at the front of the house and instead was drawn back to the kitchen. He decided to seek out a professional culinary education and graduated from the California Culinary Academy in 2005. Following graduation, Tennison traveled to Europe and experienced the cuisine and landscape of Italy for the first time. When he returned to the US, Tennison joined the Italian seafood restaurant Pescheria prior to its opening in San Francisco. Shortly after being hired as a line cook, Tennison was promoted to sous chef. When owner Joseph Manzare decided to open Joey & Eddie’s, Tennison played a key role in establishing the new restaurant. Next, Tennison joined Market Bar Café as chef de cuisine, where he learned to lead the kitchen of one of the busiest restaurants in the City.

“Though a pizzeria was something we had never created before as a company, we had a wealth of individual experience in our management team and have brought people on board, such as Chef Tennison, who truly understand Italian cucina,” explains Michael Dellar, co-founder, president and CEO of Lark Creek Restaurant Group. “Everything from our custom Stefano Ferrara pizza oven imported from Naples to securing the restaurant’s certification from the Associazione Verace Pizza Napoletana, speaks to offering the most authentic experience possible.”

Throughout his career, Tennison has been lucky to travel to Italy a number of times (returning again in October 2012), and each time he visits, he shares what he’s learned with guests. Tennison explains, “the menu at Cupola allows for such a versatility and breadth of antipasti, salads, and pastas, not to mention pizzas, there is always an opportunity to evolve and improve our offerings.”

Located in the Westfield San Francisco Centre at 845 Market Street, Cupola Pizzeria is Lark Creek Restaurant Group’s second restaurant to join the Restaurant Collection on the fourth floor. Cupola Pizzeria seats 94 in the dining room and 20 on the patio adjacent to the restaurant. The restaurant is open for lunch and dinner, serving continuously seven days a week. Parking is available at the Fifth Street and Mission Street garage, and valet parking is available on Fifth Street between Mission Street and Market Street in front of Nordstrom.
