Charismatic, Engaging and Fist-Pumping! With his hair pulled back, clad in all black with a boldly designed button down shirt, seeing Chef Hubert Keller behind the turntables playing the young MC was something to behold! Set above San Francisco at Harry Denton’s Starlight Room, his music lured you to the dance floor as he kept everyone moving to a combination of house and pop rhythms. Accompanying him was the deep, sexy tones of the saxophone played by Marcus Garcia, the manager of Fleur de Lys. Together they kept the music pulsating as they electrified and hypnotized the crowd. Supporting Meals on Wheels with half of the proceeds, it is plain to see that Chef Hubert’s talents are not limited to the culinary arts, but music and charity as well.

Q&A with Chef Hubert Keller

1. How did you get into DJing and why did you gravitate towards this particular kind of music?

Hubert Keller: I have always loved music and I played several instruments when I was younger, including piano and drums. I not only enjoy playing music but listening to it as well. I listen to all types of music and got into dance music many years ago. For a long time, I thought it would be very cool to learn to DJ. A good friend of mine encouraged me to go for it and, shortly after that, Chantal surprised me with a complete DJ system for my birthday!

I loved playing around with it but it wasn’t until I met my good friend and great DJ, Frenchy Le Freak that I started really learning how to DJ. Frenchy loves to cook and wanted to learn from me by working in my kitchen at Fleur de Lys. I wanted to learn more about how to DJ so we traded lessons and I got to learn from one of the best. I even had a chef’s jacket made for Frenchy with his name on it. Frenchy really worked with me to improve my skills and also took Chantal and I to Ruby Skye to watch him DJ. I was fascinated by how he handles an entire room — a huge, huge room — and by how he can create and change the mood of that room and keep everyone moving to the beat. I knew that this was something I wanted to do and I worked hard at getting better and better.

I knew that Frenchy approved of my DJing when, one day, he surprised me by handing me a flier for Ruby Skye that had my name on it. I opened for Frenchy, had such a good time, and I continue to love DJing whenever I get the chance.

  • Your culinary journey so far: “One Step At A Time” by Jordin Sparks

3. What is in your top 10 iPod song list?

  1. Stonebridge – Music Man – DJ Frenchy le Freak & Arteghem Remix
  2. Night like this – Trent Cantrelle
  3. In my mind – Axwell mix
  4. Embrace me – Dirthy South Remix
  5. Have some fun – Christian Marchi
  6. Bong – Deniz Koyu
  7. Let me go – Takeshy Kurosawa
  8. Good Feeling (Levels Remix)

4. If you could collaborate with 3 artists for a music video, who would they be and why?

Hubert Keller: I don’t think I’m quite ready to do a video just yet. 🙂

5. How is food and playing music similar?

Hubert Keller: I think that both music and food give us nourishment, make us happy and bring people together – – people come together around a great meal and they also come together on a dance floor. Also, playing a great set is very much like creating a meal that people enjoy in a restaurant like Fleur de Lys in that both are about creating a memorable experience. The other thing that I think is similar is that both DJing and creating a good meal require great ingredients and understanding how to put those ingredients together. For a DJ set, the ingredients are the songs in your playlist and, if you put those ingredients together in the right way, you have a great experience.

6. What was the last concert you went to?

Hubert Keller: Lady Gaga in San Jose.

7. What are the dates and venues of your next scheduled DJ appearances?

Hubert Keller: I will be at the Starlight Room on April 18 and June 6. I also hope to be playing at Ruby Skye sometime this summer.
