Oliveto Announces Details for 2013 Bird Dinners

Owners Bob and Maggie Klein, and Executive Chef Jonah Rhodehamel invite diners to experience a series of Bird Dinners from Tuesday, May 7 through Friday, May 10, 2013. Chef Jonah will focus on various domestic breeds of fine game including Liberty Farms ducks, Philip Paine’s Sonoma pigeons, Bud Hoffman hens and a variety of other birds provided by smaller, local farms such as geese (in season), Guinea hen, quail, and pheasant.

Chef Jonah’s offerings will include a Salad of Duck Fat-Roasted Vegetables with duck confit and watercress, Buttermilk-Fried Quail with Castelmagno cheese and celery as well as Poached Rolata of Pheasant with fig mostarda, barley, and natural sugo. Over the four nights of celebrating a variety of bird dishes at Oliveto, Chef Jonah will utilize every edible part of the bird including livers, cock’s combs and bird fat to make Terrinas.
