Paesan, Cucina Povera

New to Exmouth Market is Paesan, a rustic bar and kitchen serving simple, authentic Italian dishes. The first solo venture from Antony Brown (Pasta Brown, Covent Garden), Paesan will embrace cucina povera, the Italian tradition of using simple ingredients to prepare honest and flavorsome food.

The menu has been created by head chef Mattia Antonioni (Polpo, The Ivy Club and Assaggi). Meat and seafood dishes sit alongside pizza fritta and pasta plates. Sample dishes include Chargrilled sardine bruschetta; Roast lamb with castelfranco lentils soffrito; Pork involtini with smoked ham and ceps; and Risotto al radicchio and pecorino. Pizza fritta varieties feature fennel sausage, Taleggio, Rabe and chilli; and Olive tapenade, anchovy, mozzarella and ricotta.

A selection of antipasti and “piccolo” dishes for sharing will also be available. These include Grilled radicchio with smoked mozzarella; Florentine tripe and Panzanella. There is also an Italian-style weekend brunch menu including Mortadella and provolone frittata, Piadina and fresh fruit Pizzelle.

In the late-licensed basement bar, drinks will feature vintage cocktails and Italian specialities such as Negronis and Martinis plus as homemade Lemoncello and Sambucca created by head barman Paris Mattocks (Polpo).

The venue is set over two floors; the ground floor dining room seats 70 with further space outside on the street. B3 (team behind Bubbledogs) has created a raw and contemporary feel for the interiors – stripped back decor embraces the building’s original features with exposed brickwork complimented by timbers and tiling, reclaimed materials and antique-style furnishings. The downstairs bar is all wooden flooring, low ceilings, secluded booth seating areas and candlelight.
