Presidio Social Club’s new non-alcoholic beverage offerings

Enjoy the Presidio Social Club’s new alcohol free items which still has the whimsy and craftsmanship of the bar program, just without the alcohol.  The house made options include: Iced Ginger Mint Tea with honey, The Hibiscus “Sangria” Cooler and the Fresh Lemonade, either served traditionally or with a seasonal twist. These beverages are great for a working lunch, or if you come into dine with children.

Enjoy the recipes below!

Spiced Hibiscus Tea with Tropical Fruits

– 1 bunch Hibiscus Flowers
– 12 oz Brown Sugar
– 12 oz White Sugar
– .30 oz Cinnamon Stick
– 6 pcs. cloves
– 4 pcs. allspice
– 8 pcs. cardamom pods
– 12 pcs. black peppercorn
– 1 orange peal
– 1 pc. pineapple skin and core
– 2 gallons water

Combine all the ingredients in a stainless steel pot and bring to a boil. Turn down to a simmer for 20 minutes. Remove from the heat and let cool for 20 minutes. Strain and adjust the flavor. Top with small grapes, pineapple, strawberry slices and orange peel.

Pineapple Agua Fresca

– 1.5 oz pineapple syrup
– 3 oz. coconut water
– 1 tablespoon salsa
– 1 sliced pineapple round

Line the inside of a pilsner glass with sliced pineapple and fill with ice. Add pineapple syrup, coconut water and stir. Top it off with soda water and salsa.

Mint and Ginger with Honey

– 1 bunch mint leaves
– 8 oz. honey
– 5 oz. sliced ginger
– .25 oz. cinnamon stick
– .15 oz. star anise
– 2 gallons water

Bring honey, ginger, cinnamon, star anise and water to a boil and lower to a simmer for 20 minutes. Add mint, cover and steep for 20 minutes. Serve in a pilsner glass filled with ice and garnish with mint sprig and lime wedge.

 

Lemonade with Roasted Strawberries & a Hint of Vanilla

– 30 pcs frozen strawberries
– 4 oz. vanilla paste
– 10  tablespoons sugar
– .02 oz. pink peppercorns
– 5 quarts lemon juice
– 40 quarts water

Grate the frozen strawberries. Divide into 3 deep hotel pans and mix with sugar, vanilla and peppercorns. Roast at 350 degrees for 20 minutes in the oven. Cool and add water and lemon juice.
