The Festival begins with a Friday Night Reception where you and fellow truffle-lovers will have a chance to hobnob with your hosts, American Truffle Company’s Robert Chang and Dr. Paul Thomas, and Chef Ken Frank of La Toque; along with the wild mushroom forage guides David Campbell and Stephanie Jarvis, master truffle dog trainer Alan McGee, and the Michelin star guest chefs—sans toques—who have come from as far as Chicago and Italy to cook and demonstrate for you throughout the weekend.

All About Truffles

Bill and Rico Come learn all about truffles—the cuisine, the sex and the science! In this exciting, comprehensive primer about all things truffle, you will get tips on cooking with truffles from our Michelin star host chef Ken Frank who will discuss how to handle fresh truffles in the kitchen, as well as common myths and misconceptions about the various truffle species and “products.” You’ll also get a glimpse into the science of truffles (including “sex and truffles”!) with world-renowned truffle scientist Dr. Paul Thomas and truffle expert Robert Chang; plus why science plays a key role in how truffles are grown and harvested.

History of Truffle hunting: Pigs, Dogs, Robots and Common Misconceptions
To round up the truffle day, our Master Dog Trainer Alana McGee will guide you through the fascinating and fun world of training dogs to harvest truffles, complete with a demonstration at a real truffle orchard, located at Sinskey Vineyards.

Prepared by Michelin star chefs from around the world, this extraordinary, multi-course dining experience borders on transcendent—unlike anything you’ve ever had or will find elsewhere. Erotic, earthy and addictive, the freshest and most flavorful black truffles will take center stage in each heavenly course expertly prepared by one of our superstar guest chefs. This is truffle cuisine at its absolute best! Each course will be paired with exquisite wines from around the world.

Join mycologists David Campbell and Stephanie Jarvis, along with American Truffle Company’s own Dr. Paul Thomas for a gentle walk in the Napa woods at the height of the mushroom season. They’ll touch on the basics of mushroom hunting, the process of mushroom identification, and discuss proper handling and cooking options for any edible specimens you may encounter.Available as part of the Grand or Epicurean Truffle packages only.
