The Bar at Saison Elevates, Introduces New Offerings

Fresh from an eight-day hiatus in January for renovations, Chef Joshua Skenes continues the evolution of  The Bar at Saison. Along with Head Bartender Chase White, they have been working on redefining Saison’s bar as the ultimate gathering place for drinking in San Francisco–one that is luxurious, warm and inviting at the same time. Skenes and White are focusing their attention on crafting a truly singular bar menu that reflects the level of excellence in Saison’s kitchen, gleaning inspiration from Saison’s own farm in Marin. White has increased the depth of the list, working with fine and rare spirits from Asia such as karuizawa ‘noh’ 10 year whisky and shui jing fang, a highly prized Chinese baijiu distilled from sorghum. Samples of nightly selections include:

Coat of arms – calvados, our sweet vermouth, smoked goat gouda

Voyager – linie aquavit, manzanilla sherry, grilled sesame orgeat, meyer lemon, bitters

Saison milk punch – rums & whiskeys, ember roasted pineapple, warm spices

Shanghai nights – whistle pig rye whiskey, Imperial green tea, lemon oils.

Parcoco – del maguey pechuga mezcal, carpano campari, orange bitters, krug grand cuvee

White first began his training in the Saison kitchen with Skenes in 2009. He then honed his bartending skills in some of New York City’s most progressive bars including The Daily and Experimental Cocktail Club. He returned to Saison in the fall of 2013 with the goal of combining his culinary and bartending background to further develop Saison’s cocktail program.

“Chase is a great talent. The Bar at Saison deserves to be a destination all on its own. It is continually evolving into a place that reflects our overall philosophy on balance, quality of spirits and vibrancy of ingredients,” notes Skenes.

The Bar at Saison changes its cocktail offerings nightly. Guests may select their libations from White’s curated cocktail list or from Sommelier Mark Bright’s 5,000-bottle wine list. The bar seats up to 14 guests; reservations are highly recommended.
